Histamine is a natural substance that acts as a tissue hormone and neurotransmitter in your body. You're probably familiar with the substance histamine. It plays a major role in allergic reactions. Inflammatory reactions, the regulation of gastric acid production, the control of the sleep-wake cycle, and appetite all rely on histamine.

Vitamin C, for example, is needed for the enzyme DAO (diamine oxidase) to function properly. DAO, in turn, is involved in the breakdown of histamine. In addition to vitamin C, the enzyme also requires copper and vitamin B6. Zinc is used to make vitamin B6 usable. Manganese appears to slow histamine release, and folic acid is also linked to histamine levels.

The substance quercetin is said to have a stabilizing effect on immune system cells, especially those that secrete histamine (mast cells).
